Caramelize 2/3 cup sugar in nonstick pan by heating over high heat and stirring constantly until it melts and is the color of maple syrup.
Mix remaining 2/3 cup sugar, flour, and salt, add egg slightly beaten, and milk gradually. Cook on double boiler twenty minutes, stirring constantly at first. Remove from heat, stir in caramel. Allow to cool. Add cream and vanilla. Prepare in ice cream maker according to directions.
