Mate cordial

2 rounded tablespoons yerba mate leaves
1 1/4 cup neutral grain spirits (190 proof)
1 3/4 cup water
1 cup sugar
1 cup water

Put yerba mate, alcohol, and 1 3/4 cup water into a clean 1 pint glass jar. Cover the jar, shake, and let sit undisturbed for 24 hours.

Mix sugar with 1 cup water, bring to a boil, then simmer until sugar dissolves. Cool resulting syrup to room temperature. This will produce slightly less than 1 1/4 cup of syrup.

After 24 hours, strain mate leaves out of alcohol infusion, then run infusion through coffee filters 2-3 times. Combine infusion with 1 cup syrup (discard extra syrup, or use to sweeten something else). Pour into clean glass bottles, cork or cap, and allow to age for 1 month or more. Cordial will be in the neighborhood of 60 proof.
